Definately is when you know it will happen, and probably is just an assumption that is might happen, but has a good chance of happening.

the word 'definitely' means a solid perhaps sure thing. Where as 'probably' conjures up images of a suggestion or even uncertainty perhaps.

probably means that it's very likely but not certain.
