No they don`t. The wood that is used for wooden shoes is POPLAR wood, that can break when handled roughly, but does not splinter.
Nice word play about the "unvarnished truth". You are right. The wooden shoes (we call them "klompen") that are used for every day use are unvarnished.
Klompen are still used on farms, but that is about it. To us it is as much a folkloric thing as it is to you.

I have a pair of wooden shoes from Holland that my husband wore as a child. They are made so smooth on the inside and outside. Can't see how they could get splinters.

Hell Yea!!, their feet are Jaaacked up. The bottoms of their feet look like chewed up dog food meat. And Don't mention the smell, nothing but @$$ and cheese.
