There are a few right answers to this already sort-of, it is a combination.

It was, and still is by many believed that when you sneeze, your heart stops, giving your soul time to leave the body, and for Satan to possess your body with his demons. "God bless you" is supposed to help preserve the union of body and spirit.

I believe that the people used to believe that when you sneezed, you opened an opportunity for an evil spirit to inhabit your body.

The phrase was then used to help prevent you from being inhabited.

Hope that this helps.

What I have heard is that each time you sneeze, you come one second closer to death because ALL bodily functions stop for approximately one second. For instance, it is physically impossible to keep your eyes open when you sneeze!
