can i use it instead of a "such as"?

You can use a variety of things whenever you are meaning to mention examples. Most obviously, "for example", but "such as" works. So does "i.e" or "including". Usually you don't use "--" unless you want to make a sidenote. It's kind of informal and most teachers or professors wouldn't like to see it in a paper. Use something else in it's place whenever you can. It makes things easier to read and understand so there's less confusion or misreading... and also makes it longer so you can reach that 1000-word or 10-page mark much easier lol!

I've used it in informal papers as just a way to break up a sentence (For example: "The man went to the store --the store was just around the corner". Not that exact sentence of course, but you know what I mean.) It's just more common and professional-sounding to say "The man went to the store around the corner" or something.

You use that to insert something in the middle of the sentence (e.g., specific details). The addition must fit into the flow on the sentence. You can also use that at the end of a sentence to list things, so you don't have to put two parantheses next to each other if you are doing a paranethetical citation.
