an elevation map shows the topographical differences in terrain. for example, using the map (legend) you can get an idea of mountainous terrain vs flat lands or (not to sound silly) valleys and dales. they can be useful for a variety of reasons from hiking trips to flight plans or building plans.

A topographic or "relief" map is correct. It shows contour lines displaying elevation, usually in 100 foot increments above sea level, superimposed over a two dimensional map. This type of map is beneficial because it gives you a 3-dimensional view of a particular place. This information can be useful if you are building a house and you want to know where the flood plain is in relation to the lot or finding a mountain pass for an easier hike at a place you have never been to. I don't think elevation map is the correct term.
