In other words, if I continue on to the end with the boring main quest line does the game officially end or can I continue to explore the world and do other quests with my character?

No. Being a freform game that you can play any way yo want to it goes on till you stop playing. Apart from the mainline quest there are all the faction quests, thieves guild, fighters guild and mages guild as well as the dark brotherhhood and on top of that there are quests from people you meet in the towns and settlements. So simple answer is No you can play the game forever and try to find everything there is to find in the game. I.ve completed the pc version twice and I'm still playing it and I havent found everything.
