We don't want to stay in a hostel but can't afford a five star hotel either. Departing from the US.

Best thing for you to do is to go to smaller towns and book into a B&B. There are local buses that will take you to bigger towns. I would also suggest reading the local papers when you get there to check out bus tours. These can be for a day trip or some are for a few days. Local cafes and pubs serve good food reasonably priced or go to the fish and chip restaurants. We also have Mcdonalds and Burger Kings.
