Speak clearly, look people in the eye, stand up straight, and do not hesitate when meeting new people.
A firm handshake indicates confidence. I'm not speaking of a death-grip here, you feel the person's grip and he or she feels yours.

One thing I've noticed is people who aren't afraid to look at you and nod their head or say "hi", when they pass you by, as opposed to looking down. Speaking firmly when talking, speaking at all, taking initative, not afraid of risks, firm handshakes are ways I try and show confidence, or are things that I've noticed about people who are confident.

speak out, stand up straight, meet peoples gaze or eye contact.
a firm handshake and the ability to smile.
a person who is confident enough to smile suggests that they are not afraid of people approaching them. those who don't like to smile don't want people to talk to them.

They just are, its hard to explain:
They are relaxed
They are easy-going
They take things in their stride
No signs of distress or desperation
They appear to know what to do in a given situation, and have a good understanding of things when tested
Confidence develops over time of doing something frequently

The way they walk and hold themselves. Their facial expressions when someone is talking about a subject you know they don't know anything about. It's not that confused look. I always try to look like I'm condfident in myself. The confused look comes when no on can see me. :)
