Temptation is sweet for all things forbidden. That's just human nature. As for why night changes one's personality, I would say because of less stress whereas in the day you have to worry about work/school, family, etc. Daylight means reality. Night means freedom.

Sneaking out at night is in a class of behavior referred to as 'the forbidden fruit syndrome'. People love to do things that are forbidden. It gives them an adrenaline rush, a particular 'high' we get from the 'flight or fight' response to strong stimuli.
