It used to be "the proof of the pudding is in the eating."

Meaning that the quality of the pudding will only be fully understood when you actually eat it! So it's all very well to make fancy plans, or invent a new sort of vehicle - but until you actually put the plan into action, or test-drive the vehicle, you won't know for sure whether they're any use.

The jest of this adage is that whatever is being talked about is a part of other things and how it mixes with these other things will bring an outcome that can only be judged in the final analysis by how it works out-------the thing (a part of the mixture) the other things (the balance of the mxture) the outcome (the pudding) and how it works out (the taste of the pudding upon completion)---the good end being something that tastes really good---the bad end something that doesn't taste so well

The "proof" is how it taste, hopefully good. In other words you can't go on appearances alone. Example: You want to buy a used car, it looks great, but you will have to test drive it and have a mechanic check it out to prove it is a great deal.
