I'm not sure at what level of manager you are refering to. I'm not sure what you mean by "respective ethical values." Perhaps if you provided some examples, I could add more to this answer. Let me, however, provide you with my perspective as someone with food-serivice management experience.

First off, who do you want to be making decisions about how your food is prepared? Do you want the 16 year old who is willing to eat soup out of the pot with a spoon, then serve you the same soup they have been eating from? Do you want food which the teenager has just (insert disturbing image) into? Do you want food which has been left out at room temperature because someone is too lazy to put it away properly? How about food grilled on aluminum foil over the grill in an effort not to have to clean that grill again?

I gained some my "ethical values" by attending classes required by my state and national Health Departments. Most of my issues with my employees stem from correcting unsafe food handling or correcting shortcoming in customer courtesy.

As far as incidents which customers feel is improper customer complaint responses, I often tell my employees that "The customer is always right...unless they are wrong." It may sound pithy, but consider some of the examples I can provide for you.

My job is a few blocks from the local homeless shelter. Bums often come into my store for a variety of reasons. Some try to panhandle, others have people buy food for them, some sleep in the bathroom. While you are eating out, do you want bums coming up to your table just because they know you got some change from the coutner when you ordered? How would you feel if you were nice enough to buy food for someone, and the moment you walked out the door, that bum asked for a refund on the order, and just wants the cash? What would you think if you went to use the restroom and found a bum asleap on the floor?

Some behavior on the part of the managers is soley for the purpose of protecting you, the customer. It may seem rude, but it may keep you safer than you realise.

If you have eaten out, you have noticed the high prices. And you may even have noticed when those prices went up a little. There are a variety of factory, including gasoline for delivery of food, local wage laws, etc. But one of the factors is product replacement. Whether it is legitimate ordre or scam artists, this costs money. I'm not talking about legitimate mistakes here, but people who bring correctly made orders back or have no orders at all.

Every day, I have people bring food back because they could not take the time to ask a simple question to insure that what they say they want is what they want.

Another example of the sort of thing that helped develop my ethics is this: A complaint that his sandwich was cold, and so were his fries. We don't sell fries. I told him to bring his order back or his receipt, and come on down, and I would see what I could do for him. He arrived, no food, no receipt, and I asked him if he was sure that he came to my restraunt. He said he had. I said, and I quote (I have done this several times): "I will give you ten free meals if you can point to out deep fryer." At this point, I usually take out the disposable camera I keep with me, and take a picture of the look on their faces. My wall of scammers always makes the new people laugh.

There are those who would say that my personal ethics suck. They may be right. But at least I know that nobody is going to get sick from the food my employees serve, nobody has to worry about being bothered by bums while they eat, and that I am doing my best to keep our prices under control.
