If you have to convince her of eating meat, then you are trying to change her. Accept her as a vegetarian or move on.

You have to replace it with tofu. make sure you don't leave any remnants of animal protein behind, or she'll get all grossed out, and maybe dump you.
You could always tell her you're a humanitarian, and guess what they eat ?
Maybe if you sat with your car running in a garage for a while, you might end up a vegetable. Then you could qualify as the main course !

Maybe she wants a big piece of meat and not a little pink vienna sausage that is saggy and smells funny.

you can't but tell her you really want her to try a bite of you hambuger and if she says no then say u will try her veg. food if she tries meat. if she still says no then just leave it along.
