My manager is a really nice guy and I truly enjoyed working with him, but I found a much better opportunity elsewhere. How do I break the bad news? It would be easy to just say I'm leaving, but he's already lost 3 employees in the last month and he's still bitter. HELP!

Prepare a resignation letter. You should state that you've enjoyed working for the company and for your manager, and have learned a great deal. However, but you have received a job offer for a position at another company, and you are going to take it. When you indicate your last day of work be sure to give the full amount of time specified in your company policy - that's usually a minimum of two weeks, but can be four for some positions.

You can offer your manager to do what you can to facilitate the training of your replacement.

If you really are concerned for his feelings, a nice letter explaining your reasons for leaving is in order. You may want to stress that it's the company, not him, that failed to keep your loyalty.

OTOH you shouldn't have to stay in a situation that's not right for you just to protect someone's feelings. You have a responsibility to yourself as well.
