this is hard to explain but my coach taught us this move where you dribble the ball w/your dominant hand, we'll use right for this example, then you swing it to your left side just once (still dribbling) so your arm's across your body and your palm is facing right, then you dribble it once back to your right...at this point you read the defender to see what way they went to defend it...then you go the opposite way.
if you're stuck close to the basket w/no dribble, you can fake the shot to get them in the air then jump into them and shoot - you'll most likely get a foul called
you could aslo practice the spin move but good defenders can pick your pocket often

There's no magic answer to this and it really depends on who is defending you and what they try to do.
Sometimes you can just catch the ball from a pass, fake like you're going to pass or shoot, if they bite then drop the ball under your arm on the side they're not pressuring you on as much, and make a drive to the basket, but that won't always work. You just need to anticipate what the guy covering you is going to do and then try to outsmart them if you can't outrun them.

You can fake dribbling a certain direction. You can spin off of them and around them. You can go between the legs. Really the best strategy is to use your body. I know that sounds weird but you need to lunge or something to get them to bite and go the other way. Then you just run right past them.

Use screens, use the give and go: pass it off to a teammate, run and get it back

jab step and then if they bite on it, go the other way, if they don't bite, then go the way you jabbed. if you learn the jab step well, you won't have to be quick to beat defenders.
