If he goes into a canter, slow him back to a trot. Just keep doing that and he will learn to go up and down through the paces. Just make sure you are not being too firm when asking for a trot, just in case he is reading that wrong and thinking he needs to go straight into a canter.
To slow him back to a trot effectively (english style)-
Half halt with a gentle sqeeze on the reins just before you sit back into the saddle, sinking your bum into it and start rising gently. By you changing the pace with your body, your horse will feel uncomfortable and and slow his body to match yours. Squeze, release, squeeze, release on the reins, keeping them even and gentle until he starts to respond, only stopping when he has achieved the correct gait and pace.

You might be squeezing his sides too hard when you ask him to trot or giving him some other message to canter, when you don't intend to be doing so. I would recommend taking lessons (if you don't already) - someone standing from the ground might be able to figure out what's going on.
If you're sure that you aren't sending him the wrong message, then try this: every time he breaks into a canter when you ask for a trot, slow him back down to the walk and try again. Praise him if he does the right thing. It may be frustrating - but the hard work will pay off! Good luck. :)

Sit up straight, don't lean forward, don't squeeze with legs, keep reins down low near wither and dont' shake them around. Don't have them too long, just soft contact with horses mouth. This signals horse to go faster.When it stops trotting at steady speed and starts to get quicker, stop going with the motion of the horse, but stiffen up and put some weight in the stirrups, press heels down. Pull back softly on both reins evenly whilst doing this. When horse slows down, soften up and move with horse again. dont lean forward. Continue till horse moves steadily. When u want to canter, sit down in saddle, squeeze with both legs, and push bottom in cantering motion . keep reins as above except when turning, then back to correct position.Good Luck

when he brakes into a canter, stop, an back him up until he understands. like everyone else said, make sure you aren't squeezing with your legs.
