Go to your local vet and ask if you can "shadow" them a few times a week and watch what they do. I am a Vet Tech and we have kids your age come to the clinic all the time and watch us for the day. You could also ask your local animal shelter if you could voulenteer a few times a week. Good luck with your goals and keep it up!!

If you don't want to go so far as to offer your services to the vet's office, you have many options now.
Get a pet yourself if you can.
Befriend your friend's and relative's pets, ask to help with their care.
Visit your local zoos, aquariums, etc. Opportunities will abound there for sleepovers and seminars. Just reading the information they have on individual animal's displays can give you a wealth of information.
Offer to become a dog walker or pet sitter once your neighborhood decides you are old enough to handle the responsibilty alone.
Read books. Talk to pet owners. Talk to vets you know in the neighborhood.
Have a good time!
Just getting to know the local, more common pets will allow you to develop a love and understanding of their needs. That will be the first step in deciding to go all the way to becoming a vet. There are other options as well: marine biology, zoologist, animal trainer!! to name a few. You will want to interact with other species as well: reptiles, rabbits, hamsters....so you have some experience with all types!

Ask if you can help at a local vets office. Volunteer. Not to like take care of the animals but clean and stuff. You will learn alot.
You can read about animals and just keep up your dreams of being a vet. If you have animals, take good care of them.
You are just 11, it will be another 10 yrs before you become a real vet, but just keep up your love of healing animals and take up every once you can of volunteer vet work.
You can also volunteer to help out with your neibers. If you do a good job and enjoy it, in a few years yo ucan dog wash and stuff. It will all give you animal experience. I am sure you know this, but vets don't always heal sick animals, they take care of them while they are healthy to.

Do you have a vet close to where you live? Maybe ask them if you can help out on the weekends or at an animal shelter??
Study hard honey, ask your school counsellar what subjects are best for you to take as you go through school as some subjects will be more usefull to you than others in the years to come.

Like another poster said, help out at vet clinics, among other things. Volunteer at your local AKC (American Kennel Club). Attend dog & cat shows. Local animal shelters are always looking for volunteers to walk their dogs and help clean up and train their animals. Dog groomers, I'm sure would also love a volunteer as would your local pet shop. Horse farms would always love to put you to work, too ;)
Just get written permission from your parents once you find a place willing to take you on.

You can try and volunteer at the animal shelter etc. you may be too young yet for anyone to allow you to do that though. You may have to wait until you are 16 and then maybe get a job at the animal shelter, pet store or boarding facility

Volunteer at your local animal shelter. It's very tough but rewarding work. I Started volunteering when I was 14. At 11, you may be more restricted on what you can or may have to have a parent along, I'm not sure.

Volunteer your time at a pet shelter. It is great experience! Plus make sure to work hard at your math and science. You absolutely need to be good at those subjects to be accepted into Vet School.

Read anything you can about animals and their care! Ask your local zoo for a tour-they can tell you a bunch about animals, they may also have a program that allows you to help care for the animals!

Maybe you could volunteer at your local humane society. I'm not sure if law allows it or not because of your age...but it doesn't hurt to find out. Another idea would be pet sitting for people who are going on vacation.
