There are too many good race tracks to count: Le Mans, Spa, the old Nurburgring, Monza, Mosport, Road America, Road Atlanta, Suzuka, etc. Any would be worth driving on.

A "good oval" is an oxymoron. If I must pick one, then Phoenix International Raceway because it drives like a road course race: two tight turns, off-camber banking, and elevation changes. Unlike most ovals, it requires some driving skill and gear changes outside of the pit lane.

Hands down, Spa-Francorchamps; going up through Eaurouge (the greatest corner in racing) would be spectacular. No oval track really interests me; I was fortunate enough to get a ride in a pace car at Indianapolis about 10 years ago and, while it was interesting, it wasn't nearly as thrilling as the ride I took (and paid $10 for) at the old Nurburgring - in a road car.
