Perhaps a gift of thought and/or time would be best. Something like a special evening out together, or you could make something. How about a scrap book of favorite memories of the two of you? (or a photo collage which would be easier)
Use one of the online music services to create a custom mix CD.
You can also create a photo disc.
Just think about what would leave a special memory.
That means a lot more to most than just "something."

What kinds of things is she interested in? Find an activity you can do together, like live music or some museum she hasn't been to that she'd like to go to, and take her to lunch. You will both create a new memory and have fun at the same time.
