Well, fractional crystalization (or differentiation) takes certain products out of a magma as crystals, leaving behind other products. As certain things (usually mafic first) are taken out, the leftover magma becomes a different composition (usually more felsic). So, the differnt zones of a pluton represent thse different stages of fractional crystalization development.
