RF signals can vary due to changing your location within a room (even just a couple of feet), interference from other RF signals nearby like other WiFi network or cordless phones in the same frequency range, and something as simple as how you have your legs crossed while you have the laptop on you lap.

The latter can affect your WiFi signal simply by blocking the signal with your leg, which, at the frequency the WiFi works at, can block WiFi signals quite effectively.

I would check the other WiFi networks around you and make sure that your network is on a different channel than the others. Also, move cordless phones away from where you use your computer or change the channel that the cordless phone uses.
