oh...I love those games. Have you tried the transport tycoon, rail road tycoon or zoo tycoon? You might try the zoo first, since you liked the Roller Coaster one. Try some of the Sim games, sim city, sim farm, etc.
My favorite games are Role Playing Games, like Diablo and World of Warcraft and shooters, like Medal of Honor and Delta Force.
I also like puzzle games, like minesweeper and bejewled.

A million different people will give you a million different answers but for me...
Unreal Tournament 2004, Doom 3, Grid Wars (a free clone of an Xbox360 game akin to Robotron) and anything oldskool, I play NES and SNES games still.

Everyone has different tastes, but I don't think you can go wrong with Battlefield 2 or Oblivion. I also love the Microsoft Flight Simulator series.
