What is blue in the summer, brown in the winter, and smells like cheese?

A stinky piece of gorgonzola that someone forgot to put in the fridge ... it starts off being a blue cheese, then gets a blue-ish fluffy mould growing all over it. Then as winter approaches it dries out and goes brown.

The smell of the cheese would come from the mould running through it, although the smell would fade a lot by the time it went brown..!
