I guess the first time a photographer was witty enough to suggest it, the word cheese made the subject laugh. However after decades of over use the gag has worn a bit thin.
Any time anyone asks me to say cheese I end up scowling. Much better to get people to say 'prunes' so that you end up pouting instead, super model style!

it goes back to the 18th century when some fella taking a pic promised a kid he would give him some cheese if he took the pic. he said it to remind him of the cheese.
and if you believe that, you need help!

If you notice, people don't say "cheese" when having their picture taken. The photographer asks them to say it, but everyone says "cheeeeeeeeeeeeeese."
Isn't that illustrative?

well, all of the other answers are right. I think the word cheese
is a spin - off to the term "cheesy". It's like hamming it up.
