If one galaxy was made out of matter, and the other out of anti-matter... then the result would be catastrophic... HUUUUUUUUUUUGE explosion. The matter and anti-matter would collide and transform into energy, leaving no particles whatsoever.

I don't think we know a true answer to that yet. I can understand planets and stars, maybe even solar systems being pulled together by a gravitational force such as a black hole, but I don't know if it is within our understanding yet to have entire galaxies "collide".
