It would depend on the type of letter you're writing. I personally write business letters;

Dear Mr. John Doe

Body of the letter

We thank you for your business and look forward to serving you in the future.

Sincerely,
(Leave space here for you to sign your name)
(Type your name here, and your title within the company)

I don't like businesses that address their letters in a very impersonal way, to me this says they don't value you enough as a customer to take 30 seconds to address it to you, in your name, for example;

Dear Customer

Body of Letter

Sincerely,
Typed name

Alot of companies do this now, and it's unfortunate. I don't hold companies that mass mail their letters like this in very high regard. I have neat and clear handwriting, so I like to even address the envelopes by hand. Then again not alot of mail comes across the desk of a small engineering firm.
