Why does ice sometimes pop out of your ice water, or other type of iced beverage? It's almost like it completely snaps, and shoots out of the cup. Where does the energy for this come from???

Trapped air escapes as the ice melts.

Interesting question.

I'm guessing that it is from the built-up stress that is released when ice melts unevenly.

The cracking of the ice would make a snapping or popping sound.

If the ice "jumps" that might be from the structural changes in the support of the ice melting below.

The change in temperature between the ice and the atmosphere. Not as cool as mentos and coke though.

If ice is added to something warm or hot it can crack because of the sudden change in temperature. Any soild substance will do this.
