They are bound by slander laws not to broadcast anything that could be deemed slanderous.
Plus they are stopping inmates passing coded messages out.
The 'live' coverage is actually shown on a short delay to enable this.

It is on a time delay loop - every minute is observed by a lawyer - and as mentioned already any swearing, controversial topics (or anything else that could get the show sued) is silenced out. It is played as live - but time delayed and as noticed some of the sound shut off. A lot of "live"shows are recorded on a similar loop - often just a few seconds - but normally just to stop swearing.

Endeemol must follow laws and stuff like that.
Obviously they swear and they have to cut that out.
So if someone is talking about their uncle Jack who really had surgery on his chest because he likes the name Jacqueline, then they have to cut that out because if might affect the family and e embarrissing to their Uncle Jacqueline.
Even Glyn's answer to 'The Meaning of Life' had to be cut out because it would be too controversial and you'd have all these people saying 'That's not the meaning of life' and blah blah.
If someone is talking about how they got screwed over by Mercedes, they have to cut that out because that's criticising Mercedes on National Television.
And stuff like that. If you watched it last year there was an ad on E4 which stated that the sound dips are for these reasons.

The producers cut the sound when the contestants are saying something that they dont want us to hear.
It is not 100% live, there is a 3-5 second delay

to cut out any swearing or talk of family and friends private lives, they do this by having a 10 minute delay. the "live" action we see is 10 minutes behind the actual time.
