Early mathematics was meerly the process of quantifying things, eg. how many fish do I have?

There for the deffinition of 1 is a whole item. i.e. 1 whole fish, 1 whole apple etc...

The figure 1 is the sign we use to signify the number one.
Other numbers, ie integers can be defined in terms of the number one , but number one itself is often considered to be a concept, axiom or assumption.
Peano defines number(integers) using 2 axioms : zero and s, where s is the successor function.
Mathematics is more than number, the axioms will be different according to which branch you are dealing with.

i think 2 is more the building block defining math... 1 is the lonliest number... what good is 1 if not for 2? and look at all the binary in the world today

I think that you are trying to give the number (1) some kind of magical quality that it does not deserve. Mankind has invented numbers for his own convenience. I do not think that there is anything mysterious about them, as though they have been handed down from god or nature.
