I understand that liquid nitrogen will freeze anything, but I believe the chemical reaction that takes place (N + H2O + O2) will create nitric acid. Albeit, a very low molarity of nitric acid dependent on the amount of water and the size of the canister.

Responder L S is wrong: no chemical reaction occurs. But you will get lots of splattering and vapor as the nitrogen rapidly evaporates, throwing a lot of water around in the process.
