I prefer to start people with "samplers," one of machine techniques and one of hand techniques. Basically it's just collection of small pieces of fabric (say maybe 4 by 8) that you seam together or hem or whatever. Some of the basic techniques I like to teach are standard seams, stretch stitch seams, french seams, flat felled seams, serging, gathering, stitching ruffles to a flat piece, cross stitch, slip stitch, hooks and eyes, and buttons with and without a thread shank. This gives people a basic background that lets them proceed to some more interesting projects. Once they've done samplers I like to have people pick a store bought pattern to make for themselves. I prefer to ask them to do shirts because shirts offer the opportunity to practice so many techniques and because they're a good way to introduce people to buttonholes and facings. This project gives them a chance to learn how to use a store pattern and to learn the basics of cutting. It's a bit challenging, but they learn so much! And they're so proud when they're done!

Maybe sow a pillow case or a christmas stocking... nah... that's too easy... have the class start sewing their own Halloween costume! They've got 3 months to complete it!
