if you want to go vertebrate, I'd say the three toed sloth. it's as slow as it is because of a very slow metabolism.
If you're going to go with invertebrates, I think it's a snail or a slug. The two creatures are in the same family evolutionary-wise.

3 toed sloth. It is so slow that green algae grows on it.
