Either the shot didn't kill him, or Tia Dalma brought him back with her voodoo, or he made a deal with whoever rules over the dead at the ends of the earth. I like the last one best. Explains why he's the best one to take them to get Jack.

He never died in the POTC I (yes, I know he got shot at the end of the first one), however, as Tia Dalma introduces him, she says he has been to the "ends of the world" (or the land of the dead/afterlife) and probably made a deal with "whomever" (AKA king of the dead) to undo his curse. But while asking about Barbossa, you also have to wonder why the "undead monkey" is still alive, and why the "hello poppet boys" (the bald dude and his eye-popping friend
) are still walking around.

the monkey is still walking around because if you look until the end of the credits in POTC, you will see the Monkey is in the Isla de la muerta (?!) and he takes back one of the cursed medallion...so he is cursed again (not from me, I was looking for the same answer 4 days ago and saw it somewhere on Internet, checked on my DVD too, and its true)
second the 'poppet boys", the cursed was unlifted, they got arrested and they escaped before being hanged, they talk about being escaped when we see them in POTC2, so thats not a mistery in itself I think!
its really is Barbossa we dont know why he is alive, he fell in Potc on a pile of treasure and the apple goes off his hand, now I have a question about that apple though! since he was fighting Jack before being shot, how did he get an apple in his hand?!
anyway I like the theory he made a deal to come back to life, I hope we get to know in the third movie!

I was wondering that 2. I think he's alive 'cuz he might of stroke a deal with Davy Jones or something like that. Well iwouldn't really know, guess we'll have to watch the 3rd one. I hate it when you have to watch the sequels to movies in order to get the whole story.

My sister and I pondered this very question, even had a long discussion about it. In the end, we decided, that the shot didn't kill him in the first one and, somehow, he managed to make it to the witch lady's house. What I want to know is how the monkey is still undead.

The ending was pretty funny.
I have no idea but maybe he really wasnt under the curse or he really never died. Cause I dont think I saw him fall.
I hope Jack lives! They will probaly go on a quest to find him in the 3rd one. I dont think they will kill off his character.

yo! rockaway! the "hello poppets" arent dead because they did not die in the first movie! maybe you need to watch it again and educate yourself before you put up an answer on a worldwide website.
