There is a long list of anti-spam organizations that will blacklist spammers... like http://www.spamhaus.org and http://www.spamcop.net

The best place to send most of them is the site they are trying to rip off. For example I get paypal phish all the time trying to get my bank info and I forward them to paypal who goes and closes the site down that sends them.

Forward those you suspect as phishing e-mails to the FBI. They have links on their web site for such scams.

Your Internet provider probably has a spam button that you click to report it.

This will help them filter out spam for everyone.
