My son is having an army party for his 7th birthday, I want to build a course with possible a tunnel and belly crawl. I am not interested in inflated obstacle courses. Any ideas?

hurdles, but maybe really smal so no one hurts themselves, a cat walk too, but if they fall you might not want it that high off the ground, maybe a wall to "scale" uhh, a slide to run up, monkey bars to cross, ummm a "pit", a "bridge"

old tires, ropes tied 12 inches about the ground to stakes, containers of water to jump over,
you can shoot a paint gun above their heads while crawling under the ropes and throw water balloons full of water at them while they are climbing a rope to get over an obstacle

Check with you local Moon Bounce Rental company, who may already supply such a thing, or a local paintball supplier, who might help you find where to buy such things.
