im having a cookout for my sixteenth birthday and wanted some fun activities to do besides just playing volleyball

Try soccer, football, frisbee, horseshoes, ring toss...
Or go to your local Target or Wal-Mart and go to the outdoor games area. They should have plenty of fun activities to do outdoors.
Or, have some competitions. Football toss, hulahooping contest...
Or tag, freeze tag, leap frog...
Or try a contest of who can stand still the longest..

Swimming is always a good choice, not only a way to work on a tan, but also a chance to check out any good looking girls or guys that may be attending your party. Depending on how comfortable you are with the people you invited and how many you could also play poker which has caight on recently or even spin the bottle or truth or dare.

soccer, football, water balloons, squirt guns, Frisbee, lacrosse, basketball, contests, surveys, tests, etc. i think that the tests/surveys should be about you cuz after all, it is ur b-day.
