From the North Pole, down. Once you cross the equator technically you will be digging up. While gravity will make it feel as though you are still digging down until such time as it equals out, you will be, physically, moving in an upward motion. Of course, once gravity catches up you'll end up falling back down your hole anyway, so it's not really worth it.

It depends on the direction you are digging. If digging below you, well, it would be down.

You are digging up because if someone asks you what you are doing you would say, "I am digging up the earth". You would not say, "I am digging down the earth". :)
Otherwise you would spend all day figuring out what's up. :) :)

up and down are relative. you would be digging down relative to yourself unless you were standing on your head while digging.
so the answer is DOWN.
