They have traces of chromium and iron in them, which gives them the green color.
One can measure light through a spectroscope, which determines color. This way, even a colorblind person can "see" that emerals are green.

Green Wavelength is defined by standards as being 520 to 570 nm in length.
The light that reflects off of emeralds', if they are within that range means they are green.
Emeralds are known to be not green as well.

When I was young my parents and teaches told me that a certain "color" was "green", so now when I see that same "color" I refer to it as green. If my parents and teachers were really cruel and didn't like me they could have told me that red was green and everyone would laugh at me when I tried to distinguish the two!

I'm not so sure they always are, but I think that just being a different colored gem, people would call it something else. (like how sapphires are blue.)
