Always REMEMBER If anyone ever Invites YOU out to dinner, THEY WILL BE THE ONES PAYING, If you are doing the Inviting then YOU MUST PAY, It is like a date (example) If you wanted to take a nice young lady to dinner or a good friend, you would do this by way of a verbal invitation which would mean that you would be the one that would pay. I would at least offer. He will probably insist if he files it to expenses, but it would be a good idea on your part. If he insists, let him without putting up too much of a fight. If he lets you pay, be cautious the next time he asks you out.
Oh, if you want to pay, just make a jesture for the check when it comes. The rest will play out as it should.

In most such cases it is the boss who pays. But that is limited to Official interactions.... In the culture I belong, it is generally not expected for me to pay my boss. However, the safe bet (that I use too) is to go in for dutch... pay just for your meal giving him. That would not offend him.. worse come worse, he'll give the money back to you and insist on he clearing the check.
