I know this sounds silly, but I just don't find the combination of key to make it (I had to cut and in past it to write this question :-))

I noticed this the other day. Haven't had to use it yet.

So it isn't Alt F3 or Option F3. Alt F3 is Sys Pref>Sound!! As you no doubt found out.

So the only way I have found is:

Sys Pref>International>Input Menu tab. Click check box for Character Palette, and at the bottom: Show input menu in menu bar.

Then when you click the flag (Union Jack!!?) in the menu bar, you get to open the Character palette. The # symbol is in Punctuation. Set it as a favourite by using the cog.

This works. I'd like to know a key stroke - if you find it let me know!

It may be different on an Apple...
If not, try Alt + 35
