Just need help on what to cover them with?????? any suggestions

Do you have a dollar store or even a craft/fabric store near you? Look at the dollar store first, you'll be surprised what's there, but look for tablecloths that the pattern or colors match the colors of your wedding. If you don't find anything, go to the fabric store and look for inexpensive fabric that matches the theme of your wedding. Then purchase enough to cover the hay bails. Before covering the hay bails with the material, cover them with plastic tarps so as to not have your guests get wet bottoms from the hay, because hay tends to hold moisture, then cover the tarps with the decorative material. It will look beautiful.

quilt is a good idea as it is country-ish, is that the theme here? maybe some better pillows for the old folks! Congrats!!
