blue is the colour of Savoia, which as you probably know, was the ruling house of Italy from 1861 until 1946. Until then, the country's flag always had the Savoy coat of arms on it. It is only since the Italian Republic was established post-war that the tricolor has been the national flag.

Don't know about the Italians, but the dutch playing in orange is possibly a historical reference to the Dutch Prince William of Orange

Sky blue replaced into the colour of the Royal living house of the dominion of Italy. the classic shade of the national team (as properly as of all Italian communities and athletes, different than in motor activities) is sky blue (azzurro, in Italian), and for this reason national team individuals are nicknamed Azzurri.

i will say it is symbolic, blue in italy means strong and firerce, and thats what they want for the azzuri's on the pitch.
