I've seen that Visa and American Express are ok but some places have said that you can use a 'European MasterCard'. I want to make sure I can use my American MasterCard.

Yes, since Visa and MasterCard/Maestro are accepted almost everywhere. Whether it's a MasterCard or MaterCard debit card you should check with your bank and/or credit card company to find out if there are international transaction fees and to also let them know you will be traveling abroad so they don't think that it has been stolen since your purchases will most likely be in another currency/country.

As long as it has the MasterCard logo, you will be fine. However, you may end up paying HUGE fees to use it there. Contact the financial institution you hold your MasterCard with to find out what fees may apply to your specific account.

You need to let you bank know where you are going to travel with a debit card outside of the US. MasterCard debit card should work. In the UK, you will need to tell the merchant to slide the card through-then you will sign for it regardless of the chip n pin. If the Merchant does not take Mastercard but does take Maestro or Cirrus it will work like a debit card. You would choose chequing and enter you pin. Your bank may need to activate these features for your card to work at all merchants outside of the US.

I've used my visa all over europe, so I assume MasterCard's the same way...

Yes you can... as long as it has the 'Mastercard' logo on it and the shop accepts 'Mastercards', which 99% do.
