Honda GN4 or HP4 is the factory recommended oil. The GN4 is cheaper and is probably the best choice for an older engine.

Refer to the local Honda service department where the Bikes sold. They will have all of the information you need on older models. Also, check out the main Honda website. It may direct you to where you can find this information online.
Being an avid bike fan, my hunches tell me that 10W-30 would be fine. The thing that you worry about most is the viscosity of the oil. The older model in-line four cylinders weren't as high revving as they are nowadays. Try the 10W-30.
Having said that, the oils made today can really help out an older engine. Especially if you use the synthetic oils. If you are changing the oil yourself, you can usually only find the filters from Honda and they are generic for most models, they cost around $15.00 U.S.
Hope this helps.

Ah, the classic CB 750-Four. Loved mine.
Use 10W30 or 40. Quaker State and Valvoline are very good.
Do not ever put in synthetic; I've heard that it can be quite harmful to that type of clutch

Stay with the Honda Oil. It's a little more expensive than automotive oil, but you won't run into any long term issues. And change the filter every time you change the oil, preferably every 3,000 miles or so..

Engine oil is sometimes not the same as transmission oils.
Use synthetic oils, to cut down the heat. 40sae is good for hot climates. for colder lower the sae to 30.
