Just because you don't care what people think doesn't mean that what they say doesn't have an impact on you. It just means that you won't let it affect your day to day life.
If someone doesn't like the way I dress, that's to bad. I'm not gonna go buy a new wardrobe because someone has a different fashion sense than me.
Sometimes the critisism is meant to be helpful and not harmful. If you realise that what they say is true, and that you might find a better way of doing something through someones critisism. Is that caring what they think or simply realizing that maybe there is a better way than what you had previously been doing.
It really depends on the situation at hand. There are so many variations of what your question could be about that it is hard to pin down an answer.

Because no man is an island, and with that comes the intense desire to not suddenly become an island just because you are the only person in a large group that thinks a certain way.
Trying to fit in almost got me killed, so I tend to not stress about other peoples thought as much as I used to. I just try to weed out the wiser people from the rest of the rabble, thats all, and listen to the people who want the best for me. Ultimately though, I try to make decisions based on what I believe is God's will for my life.

Its natural for people to want to be liked and accepted by all. We try to say that we do not care what others think, but its human nature and hard to get away from feeling down when someone is negative toward you or talks negative about you. It's much healthier to not allow other's negativity to affect us, but its hard.

Because usually when I say "I don't care" I really do, but I'm saying it to end the conversation. It's my way of avoiding an argument before it actually gets there. I don't like a lot of conflict, I can deal with it if I need to, but I try to avoid it at all costs.
So when I tell people "I don't care what she/he thinks" What I'm really saying is, I'm real pissed off right now and I don't want to talk about it until I calm down.

Never say never. There are lessons to be learned and if you feel a kick-back in your stomach then someone "pushes your button" and you should ask yourself why that occurs? Nobody can tell you what's going on inside yourself. That's part of the adventure of living.
However, if you hear the same remark many times and you don't "react" to it anymore, then you've spiritually conquered that one.

Because sometimes you realize that the person is right. For example, they could point out that you talk funny and you never noticed until then or something.

because your perception of yourself comes from other people think of you. So if someone says something bad, you think it's true. We remember bad things a lot more than good things.

Usually its because of anger we make a quick judgment. But some of us truly don't care anymore......Live and let live or go insane......choices are of an important nature and not caring in some instances is very healthy............

Because you have pride in yourself.
people are mainly only jealous anyway so don't worry about it.
if you know you are a genuine and sincere person why should you be taking any notice of what other people think of you?
