First of all, it's potable water meaning drinkable. Portable means you can carry it. Various plants, cacti, and roots hold water. A banana plant has large leaves that can be shaped to catch all the water you need assuming you are on an island that has significant rainfall. Also, many island indigenous fruits such as coconuts have sufficient water content in them naturally that you would not die of thirst. You can crack open the coconuts drink the milk, eat the pulp, then use the shells to catch water.

There is a couple things wrong with this question. What is a islend and what is portable water? Do you mean island and assessable fresh water? If you are on an island with no fresh water to drink, you can find plastic, put it over vegetation with a container in the middle of the plastic. Make sure the plastic is higher on the edges then where the container is. You will get drinking water overnight. Also you can collect rain water in containers, plastic,etc.

1) Build a distillery. The most primitive would involve first building a fire, fashioning a pot to heat seawater, and collecting the steam above the boiling water.
One could find a rock that has a natural cavity to hold water, heat the rock over a fire, collect the steam on a cool leaf, then lick the water off the leaf. Working with this idea one could build more and more efficient devices depending on the resources available on the island.
2) Catch and eat animals + plants which will contain varying amounts of water which is salt-free enough to be useful.
3) continue to search for easier sources, such as underground.
4) be prepared with devices to catch water if it rains.

You can also distill fresh water from sea water, though it would require a campfire and a vessel to boil the water in, along with some heat-resistant tubing and another vessel to collect the condensing steam. I can't find quick information on the web about them, but they used to be common equipment carried by explorers in coastal desert regions.
Perhaps the best method would be to harvest rain water, assuming it rained occasionally on this hypothetical island.

You could use the dew that collects on leaves in the morning, or you could wait until it rains.
Also, there are some plants/fruits that grow on islands and have water or liquid in them.
If possible, de-salinize the seawater, but you have to have something to separate out the salt once you've heated it up.

i saw on Zoom on PBS (OK but I'm 31...) the way to make a distillery, so I would try to distill water using a double bowl of some type (coconut shells?) and a leaf at the top to get the water to evaporate and drip into the smaller bowl.....who knew PBS could be useful for times when one is stranded on a hypothetical desert island.... ;)

I think you mean "potable water" With a plastic sheet & a container you can create a device that will distill sea water with the heat of the sun.
