I recently installed a jet sprinkler pump 1hp. After priming I can get the pump to pump water for a little bit, however, with little pressure and after a bit the pump cuts off and will not come back on for a while, even if I un-plug and plug it back in. I have not installed a pressure tank yet will this solve the problem? I am drawing from a shallow well that I also did my self, it is about 26ft deep and had a static water level of about 7ft. I live in Florida.

i install irr. systems for a living- the tank is a good idea to protect the pump-every time the pump runs it needs a full minute to cool down-a cycling pump will not last as long as its intended--as for your psi problem, how is the flow rate? if its alot less than desired your suction line may be clogged, too small, allowing air in, or maybe your check vavle is in backward or obstructed-another place to check is to make sure the pump is wire correctly-if the wires are reversed, some pumps will run backwards producing poor results
also check to make sure the relay switch is wired right and of the right type--check any isolation vavles that may exist--if all else fails call your local irr. contractor--good luck

This type of pump may not have enough suction lift to pull the water out of the well, or your suction line may be clogged, or your suction piping is not air tight and allowing air into the pump.
A pressure tank only would help hold pressure in the system to a point (depending on the size you use). Normally you would install a pressure tank to save your pump from comming on for every little usage and have a longer run time when it does have to come on (like for your whole house).
