Coins are easier. most people have random change in their pocket, but some people might not play pool if they had to take their change and put it on a card. Or if you mean credit/debit cards, many people do not use or carry their cards.

It more expensive to install a card reader than coin operating machine plus a card reader would need to drain electricity which would make the table abit strange to have wire sticking out. And also the card itself would be additional cost

i doubt your average pool hall customer has the ability to use a card reader or even owns a debit card

The reason they haven't changed is that they make money the way they are. If something is not broken, you don't strive to make it better. They make a lot of money the way they were designed! Take care, and good question!
