"universitymo" started to get an inkling. Chopsticks in use in Asia long before Europeans used anything but a knife to stab food.
As to why the Western world started, one the idea of a spoon and fork were introduced, I suspect it was when food became more of a social event, and not just an excuse to fuel up. As menues became more varied, dining habits became more ritualized. The Renaissance period saw many daily behaviors formalized with strict rules and sequences.
Eventually, we saw a dozen different forks, four of five spoons and three knives as the minimum number of utensils on the table.
Me, I'm a Viking kind of guy. A pigsticker for my meat and a bowl for my beer.

Originally people only ate with knives, stabbing the food.
The fork came to Europe through Italy's nobility in the eleventh century. Throughout the next five hundred years, the table fork spread throughout Europe, and into the lesser social classes. By 1600, the fork was known in England, although rare and viewed as an Italian affectation, while in Italy even the merchant classes were using forks regularly.

I eat my pizza with my palms. I once went over to a friends homestead and they prepared pizza for dinner and set out some knives and forks. i became so perplexed so I in simple terms all started ingesting the pizza with my palms notwithstanding the total relations in simple terms stared at me like if i became an alien and someone reported "do not you've a knife and fork?" curiously to them it became rude to eat with my palms, so i tried to eat something else of it with the knife and fork and it became so no longer a threat for me that I in simple terms stopped ingesting all mutually and reported I wasn't hungry anymore.
