Nacho is the name of the character. Libre in this film comes from "lucha libre" which translates as "freestyle fighting" In the context of the movie it relates to Mexican Wrestling.

Nacho : because is the name of the Jack Blak character
Libre: because in spanish "Wrestling" its "LUCHA LIBRE", wich means "Free fight" so the director put "Nacho and Libre" together to sound more like a mexican wrestler. By the way, Nacho Libre is inspired in the life of "FRAY TORMENTA" a mexican wrestler who is also a father (priest) and start to fight for the kids in the monastery he was in.
