Once you break it down and say it....I don't really hear the difference.

Yes. The a in father lasts just a bit longer than the o in pot and is a little softer as well. The o in pot occurs further back in the mouth as well, the mouth opens more in back that with the a in father.

I hear the difference, but I had that difference hammered into me as the result of a linguistics class in grad school. I don't trust my own articulation anymore.

It depends on which dialect you speak. If you don't hear a difference, you're not a speaker of a dialect that makes that distinction.
